I like tofu, I really do. No, I'm not vegetarian, but tofu done right
can absorb surround flavors and be realy tasty.

That said, I can't see tofu standing up the the slow, wood smoked
cooking process and being anything that could be gathered with a spoon,
let alone being messy finger food. Most of it would disintegrate
andfall into the fire, where it would dry, char and add its own smoke to
whatever remained.

I have rarely found that mail/internet ordered stuff comes close to
being as good as the real thing...

Alright, the next time I'm down that way I'll give Rendezvous a shot.
I am suspicious of a place with a french name having good BBQ... ;-)

Sometimes it's the killer beans and/or potato salad sides. Smoque,
the place I go to here in Chicago, has this peach cobbler that you
always have to save room for, but never do, but you don't let that
stop you. That place in Oregon had some of the best potato salad
I've ever had. None of which come in a low calorie version...
