Dusk is generally when they take the animals in. The live
attractions at AK are on the schedule for the animals. It seems most
of the animals don't have a watch, and use the sun as a guide to when
things should happen.

So for EMH at AK, things which involve animals, like the trails, and
the safari, close. Other attractions keep going. So things like EE,
Rapids, Dinosaur!, Bugs Life are kept open.

Right, that was my point. But in July, that would be later than
in January. However, as someone else pointed out, the normal
park hours are adjusted to account for the different sunset
time, so that would still leave the evening EMH starting around
dusk, hence no way to have the safari and trails open during EMH.
I had forgotten about the later operating hours of DAK in the summer.
