I thought allergies were only to proteins? Perhaps it's an allergy to
pectin? Or a component of pectin?

I am allergic to chocolate, coffee, tomatoes and soy. Not gonna die
allergic but I do stay away from three of the four. Unless I want
headaches and canker sores..

SWMBO is severely alergic to mushrooms, and probably other fungus-
based foods.

Disney is always very helpful. We were told that Kouzina uses NO
mushrooms in any of their items.
