Well, at least I went out on a limb enough to try define it!

I actually would say the fixed pitches are a requirement for music, as
anything else would be just a soundscape, which would be impossible to
render in anyway on paper.

you can actually render birdsong on paper, but you cant get birds
to sing it back.
Although I think I agree that for most people music is a
succession of fixed points of sound, although rhythm may include
"untuned" percussion. Musicians will no doubt say otherwise, but
few appreciate the results.
